Today’s recipe: Hot Honey Salmon Bites

For today’s recipe, we are marrying salmon with an amazing honey glaze. The honey complements the fresh hearty taste of the salmon but is kept from becoming too sweet by the addition of sriracha. With garlic and ginger, this recipe hits all the flavor notes while being high in Omega-3 and DHA which is good for improved brain function. Substitute the flour with almond flour or omit it altogether, and hot honey salmon bites are gluten free. Ingredients

3 tbsp Cornstarch, divided
½ cup honey2 tsp minced ginger
2 cloves minced garlic
2 tsp chile powder
2 tbsp soy sauce
1-4 tbsp sriracha (depending on your preference)
2 lbs salmon cut into 1-inch-wide strips
¼ cup coarsely chopped peanuts (optional)
¼ cup diced chives (optional)
½ cup flour


Directions

Mix ginger, honey, garlic, chili powder, sriracha, soy sauce, and 1 tbsp cornstarch in a small bowl and set aside.
Sift flour and 2 tbsp of cornstarch together. Then coat cubed salmon in the flour mixture
Heat 1 tablespoon of olive oil in a pan and fry the salmon lightly until all sides are crisp. Remove salmon from heat and place on a small plate. 
Pour the bowl of honey mixture into the frying pan and stir honey glaze until thickened.
Add salmon to the sauce and mix until all sides are coated in a honey glaze. Remove from heat. Garnish with chopped peanuts and chives (optional). Serve immediately.
